I pulled up pictures of your 2008 Viking Epic 1706 and found that it uses a side mount trailer jack. So since it is welded on you could use a Pro Series swivel jack part # PSEJ10000101 mounted on the other side since this would bolt on with included u-bolts. The outer diameter of the hub bore (shaft) portion of the Dexter Trailer Idler Hub Assembly part # 8-258-5UC1-EZ is 1.986" outer diameter so your wheels will have no issues clearing it.

To connect an auxiliary battery, I recommend using 10 gauge wire, like # 10-2-1 (per foot) to connect the 12V power wire on your trailer side 7-way connector to a junction box like # 38656. From there, you can run more of the same wire from the positive side of the battery to the same post where you previously connected the 12V wire on the junction box. To connect to the posts, you can use 3/16 inch ring terminals # 44-5310A.
